Cannoli Poke Cake

1 box white cake mix, plus ingredients on box
1 14 oz cans sweetened condensed milk
1 1/2 cup ricotta cheese
1 1/2 cup mascarpone cheese
1 tsp vanilla extract
1 cup powdered sugar
1/2 tsp cinnamon, optional
1/2 cup mini chocolate chips
powdered sugar, for dusting

1. Bake cake according to directions on box for a 9x13 pan.
2. Allow cake to cool completely.
3. Poke holes all over the top of the cake. (I used a straw)
4. Reserve half a cup of sweetened condensed milk and pour the rest of the sweetened condensed milk over the cake.
5. Put cake in refrigerator for about an hour to absorb milk.
6. Combine ricotta cheese, mascarpone cheese and vanilla extract in a mixer bowl. Beat until smooth.
7. Add powdered sugar and cinnamon, if using and mix until combined.
8. Add reserved sweetened condensed milk and mix until combined.
9. Once cake has absorbed milk, spread cannoli topping evenly over cake.
10. Top with mini chocolate chips and a sprinkling of powdered sugar.

Crunchy Panko-Crusted Cod

    1 pound Cod fillets
¼ cup flour, unbleached or all-purpose
    1 egg, beaten
    ¾ cup Panko bread crumbs
    1 teaspoon salt
    1 teaspoon pepper
½ cup olive oil, or enough to cover the bottom of a large frying pan

Lay out the flour, beaten egg and Panko bread crumbs on three (3) separate plates, or shallow pans.
Heat the olive oil in a large frying pan over high heat. (This should only take a few minutes, watch the pan and be careful not to burn the oil).
Sprinkle the fish with salt and pepper.
Dip the seasoned fish in the flour, then egg and then press the fish into the Panko bread crumbs, coating the fish evenly on all sides.
Place the fish carefully in the hot pan and reduce the heat to medium, but keep it at a sizzle. When both sides are evenly browned, remove the fish from the hot oil and serve immediately.

When the first side is nicely browned (about 2-3 minutes) and the fish is turned over, you may need to reduce the heat to low, but keep the oil at a sizzle. Reducing the heat will avoid the fish from burning, and will cook it evenly all the way through.

Valentine's Day Peek-A-Boo Pound Cake

2 (16 ounce) boxes Betty Crocker Pound Cake mix
1/2 cup (1 stick) unsalted butter, divided, softened
    4 eggs, divided
    1 1/3 cups milk, divided
    red food coloring

Vanilla Icing

    1 1/2 cups powdered sugar
    2 1/2 tablespoons milk
    1 teaspoon unsalted butter, melted
    1/4 teaspoon vanilla
    1/8 teaspoon salt

Preheat oven to 350. Coat a 9×5 inch loaf pan with cooking spray.
Prepare your first pound cake: combine 1 box of cake mix, 1/4 cup (1/2 stick) softened butter, 2 eggs, and 2/3 cup milk in a large bowl. Whisk together with an electric mixer or by hand. Add in your food coloring until you reach the desired color (I think I used 25 drops.)
Pour batter into prepared pan and bake for 8-10 minutes less than instructed on box (about 50 minutes.) Let cool, remove from pan and refrigerate for up to 4 hours. Cut cold cake into slices the thickness of your cookie cutter. Cut heart shapes from the slices. Set aside.
Prepare your second box of pound cake mix the same as the first, except omit the food coloring. Coat a 9×5 loaf pan with cooking spray and pour just barely enough batter to cover the bottom. Align your heart cut-outs down the center, keeping them tightly together. Poor the remaining batter over the heart cut-outs in the pan, making sure to cover the sides and tops. (Careful the batter doesn’t overflow.) Bake according to the directions on the box, about 1 hour. Let cool when done.
Meanwhile, prepare your icing. In a medium bowl, mix all of your ingredients together until combined and creamy. Add more powdered sugar if it appears too runny or more milk if it seems too stiff, until you reach the consistency you like.
Remove baked and cooled pound cake from pan and top with icing. Let set; cut into slices and enjoy! Adorable, right!?

Crispy Cheddar Chicken

4 large chicken breasts
2 sleeves Ritz crackers
1/4 t salt
1/8 t pepper
1/2 C milk
3 C cheddar cheese, grated
1 t dried parsley

1 10 ounce can cream of chicken soup
2 T sour cream
2 T butter

How to make this recipe

1. Cut each chicken breast into 3 large chunks.
2. In a small food processor grind up the ritz crackers.
3. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the 1/4 t salt and 1/8 t pepper into the cracker crumbs and stir the mixture around to combine.
4. Dip each piece of chicken into the milk…then the cheese. Press the cheese into the chicken with your fingers. Some of it will fall off when you add it to the cracker crumbs, don’t worry about it.
Press the cheesy chicken into the cracker crumbs and press it in. By the time you are coating the last piece of chicken, the dish you are using for the crumbs will be full of cheese. Don’t let it get you down. Once the cheese melts in the oven it will adhere nicely to the crumbs and the crackers.
5. Spray a 9×13 pan with cooking spray and lay the chicken inside the pan.
6. Sprinkle the dried parsley over the chicken.
7. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10 minutes, or until the edges of the chicken are golden brown and crispy.
8. Into a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.

Texas Roadhouse Rolls

2 tsp. active dry yeast
1/4 c. warm water
1 C. warm milk
1 1/2 T melted butter
1/4 C. plus 1 tsp. sugar
3-4 C. all purpose flour
1 egg
1 tsp. salt

I used my bread machine dough setting to make this.

Combine water, yeast and 1 tsp. sugar and let sit till foamy, about 7 minutes. Add in warm milk, melted butter, 1 beaten egg, sugar, salt and then flour. I ended up using about 3 1/2 C. flour. Once dough setting is complete, remove and knead a few more times on a floured surface. Pinch off gold ball size pieces and flatten just a touch and place on greased cookie sheet. Allow to rise another hour and then bake at 350 degrees for 20 minutes or until golden brown on top.

Buttermilk Biscuits

3 Cups Self Rising Flour
1/2 Cup Lard (yes lard, makes a flakier biscuit)
pinch of sugar
Melted butter

Cut lard into flour and add the pinch of sugar. Add enough buttermilk to make a soft dough and knead until smooth (do not over knead as this will lend a tough biscuit). With floured hands pinch off a bit of the dough and roll into a ball, lightly flatten in a greased iron skillet or pan. Bake in a preheated 425 degree oven for 15-18 minutes. Brush with melted butter when removed from the oven.

Cube Steak in the Slow Cooker

6 cube steaks
1 large onion, sliced
gluten free soy sauce or coconut aminos
seasoned salt or other seasoning
2 cloves garlic, grated or minced
sliced mushrooms
sweet rice flour, corn starch, or arrowroot starch

Place the onion slices and about ½ c. water in the bottom of the crock pot.
Add the steaks in layers putting a little soy sauce, seasoned salt, garlic, and mushrooms on top of each layer.
Cook on low 6 - 8 hours or high 3 - 4 hours.
Remove the steaks and onions and any fatty bits.
Using about 2 Tb. sweet rice flour or 1½ Tb. corn starch for each cup of liquid, whisk the flour/corn starch into ½ – 1 c. of cold water.
Add this mixture to the hot broth and whisk while heating it on high in the crock pot or in a pan on the stove (stove will be faster).
Heat and stir until it starts to boil then remove from heat and serve over the steaks.

Mix together sugar and enough cream to achieve a spreading consistency. Add extract flavor of your choice and salt (if desired- I omit). Spread over warm still warm cinnamon rolls. This also makes a nice icing for quick breads like banana bread or zucchini bread.
