Skillet Cabbage and Smoked Sausage


1 med. head of cabbage, chopped
1 small onion, chopped
1 14 oz. can chicken broth
1 15 oz. can small diced tomatoes
1/2 C. uncooked rice
1/2 lb. smoked sausage, sliced thin
3 T. butter
1/2 tsp. salt and pepper
pinch of red pepper flakes (more if you like spicy)

Melt butter in a medium skillet (that has a lid). Add in the cabbage and onion and sauté for about 5 minutes on medium high heat. Add the diced tomatoes with juice, 1/2 of the chicken broth, rice, sausage and seasonings. Cover and reduce heat to medium. Watch and stir often as the rice absorbs the liquid add more broth. Cook until rice is tender (took me about 30 minutes). I served mine with cornbread.
